Mushroom Profiles are prepared from fresh, chunky slices of large flat mushrooms, dipped in batter and coated in a home-style seasoned breading.

Coquille St Jacques

Queen Scallops in a creamy white wine sauce with chopped onion and mushrooms. Served in a large natural Scallop Shell. Finished with duchesse potatoes, parmesan and a dusting of paprika.

Salmon Cointreau

Skinless and boneless prime salmon fillet smothered in Cointreau and prawn sauce, then cradled in puff pastry. Finished with a twist of lemon, a sprinkle of fresh orange zest and chopped chives.

Veg Nut Roast with Apricot & Goats Cheese

Pan fried vegetables with apricots, peanuts, almonds & walnuts, topped with creamy goats cheese.

Chocolate Yule Log

A moist chocolate log split and sandwiched with chocolate fudge. Masked with chocolate fudge and dusted with sweet snow.
